Our philosophy is simple: we use the finest flours, quality butter, and European chocolates we can get our hands on. During the growing season, the selection of in our pastry case is determined not by our bakers, but by the local farms we partner with for their amazing fruits and vegetables.

In an industry obsessed with convenience and speed, we decided to go the other direction. Unbleached flours and preservative-free ingredients are essential to our values and we price ourselves on doing the things the hard way – valuing taste, texture, and process above all else.
